Gajar ka Kheer!!

Gajar ka Kheer!!



Ingredients:

  • Carrot - 2 if big ones and 4 if smal ones
  • Ghee (claried butter) - 2 table spoon
  • Full cream milk - 1 litre
  • Cardamom (elaichi) - 3 in number (if you have cardamom powder, then 1/2 tea spoon)
  • Sugar - 4 table spoon
  • Almonds and Cashew nuts or any dry fruits of your choice
  • Condensed milk (optional) - 2 table spoon

Pre-cooking preparation:

Grate the carrots and remove all the water from it. You can do it by pressing grated carrots in between your palms.

 

Procedure:

  • Take a heavy bottom pan and heat it.
  • Now pour ghee into it.
  • Once the ghee is hot, put grated carrot into it and fry it on slow for 10 minutes.
  • You will soon start noticing the color change and beautiful aroma.
  • Now take it out from the pan and keep it aside.

Kheer in Making:

  • Take a heavy bottom pan and pour milk into it.
  • Now place it on to gas/electric oven and let the milk boil for 5 minute.
  • Now put Cardamom (elaichi) and let it boil for another 10 minutes. Do remember  to stir it every 2 minutes to ensure the milk is not getting burned at the bottom.
  • Now put fried carrots and cook it by stirring for 5 minutes on slow.
  • Now put the sugar into it; do not worry if the content looks watary. It is absolutely normal.
  • Stir continuously and cook for another 10 minutes.
  • Now add condensed milk and add all the dry fruits of your choice and cook for 2 minute
If you want you can add dry fruits for garnishing after the kheer is done!


Yumm!!!!!! The gajar ka kheer is ready to be served hot or cold; wish is yours... :)

Samosa (Indian triangular pastry filled with potatoes)

Recipe for Samosa (will make 8 pieces):



Ingredients:

For samosa poori -
Maida [all purpose flour] (3 cups); refined oil (1 cup); 1/2 spoon salt.

For filling -

Potato (3 big; cut into square pieces); cumin (zeera) seeds; oil (5 tea spoons); cumin powder (2 tea spoons); salt to taste; chilli powder (as per your taste); water 1/2 cup.

Procedure:
For samosa poori - Mix the oil + maida + salt together in a mixing bowl and start mixing it with hand very well.
Mix it for at least 15 min. Now add little of water (as less as possible) and knead it to a very hard dough.
Do not worry if your dough separates out into pieces when ever you are trying to stretch it. This is how it should be.
Knead it for minimum of 20 min and remember not to add water. Add oil 1 or 2 spoons while kneading the dough.
Now keep it aside rapped in a foil (this is to avoid drying) for sometime until your filling is ready.

For filling:

Take oil in a pan, add oil to it and to the heated oil add cumin seeds.
Now add potato pieces to it and fry on slow flame.
Once the potato looks fried and becomes soft, add cumin powder+salt+chili powder and add little of water to it and cook it for sometime, until the mixture is thick. It will very much look like aloo zeera. You can prepare any other fillings as per your wish. For example, with paneer (cottage cheese) or meat etc..

To Make samosa:

1) Make 4 balls out of the maida dough.
2) Roll it into a poori.
3) Cut the poori into half moon shaped.
4) Now fold it into a cone shaped structures. No fill in the potato filling into it and close it by sticking the edges with little touch of water.
5) Now put a lot of oil into a kadhai or a deep pan and let it heat.
6) When the oil becomes warm to little hot (THIS IS THE MAIN TRICK FOR BEST SAMOSA). Put the samosa into it and let it fry in NOT very hot oil.
7) Always remember, if the oil becomes very hot, the samosa will not be crispy and it will become soft after you remove it from frying.
8) Frying samosa will take a lot of time; so prepare all the raw samosas and fry them together after you are done.


TA NANA NA NA samosa is ready to be served with any hot and sweet chutney or tomato ketchup!

Super soft Chocolate Brownie!

Chocolate Brownie!!



Ingredients

1 cup sugar (powdered) you can do it in grinder at home.

1/2 cup Maida (white/refined flour)

Half cup chocolate powder (non sweetened)

3 Eggs; separated (yolk + egg white)

1 table spoon baking powder

Procedure

1) First in bowl mix egg york with powdered sugar very well... For at least 10 min.

2) In a separate bowl sieve the chocolate powder+Maida+Baking powder... (this helps in mixing these ingredients very well)

3) Then add this mixture to the paste of sugar and egg york that u already prepared in the 1st bowl...

4) Mix very well... Do not worry if it looks thick in consistency.

5) Keep mixing for at least 10 min.

6) Now add the egg white and mix very well for another 10 min.

7) Keep the mixture aside for 1 hour.

8) Now bake it in the oven (not microwave oven)
Baking Process

1) Preheat the oven for 15 min at 100 degrees

2) Now take a baking bowl or tray; place a butter paper on it and now spray/apply oil to it.

3) Now put all the batter now put and place this into the oven at 110 degrees for 20 minute.

4) To check after 20 minute place a clean knife inside the cake and see if it is coming out clean. If the knife comes out clean switch off the oven and let the cake cool inside it for 15 minutes

5) Now place the cake containing bowl onto a plate upside down

6) Remove the butter paper

7) And your super soft brownie is ready to be served with chocolate and Vanilla ice cream... Yipppeeeee!!!!!

In case you do not have baking oven... chill!! as i say cooking is made easyy...

1) You can also make it in a big cooker. Happy???

2) Place the cooker on gas oven, put a thick layer of salt inside it.

3) Close the lid (remove the whistle) and preheat it for 10 min.

4) Now place a small bowl on top of the salt layer

and place the cake batter containing bowl on top of it

close the lid and cook it in very sim heat for 40 min

5) Ta nana na na!! Yes.... Your super soft brownie is ready!!!
